Job Description & Responsibilities
As the Kitchen Director you own and are responsible for the day to day Back of House operations. You are expected to run daily reports including labor and speed, run breaks, execute catering orders, assist in running operations, and ensure remarkable customer service. A successful Kitchen Director must be mature, patient, and professional with a growth mindset at all times. In addition to these qualities you are required to possess a desire and willingness to develop your team by providing feedback to team members, leaders, and future leaders, while being confident enough to coach awareness and provide/receive constructive criticism to/from your fellow co-workers and leaders. You must enthusiastically and passionately lead by example, with integrity to build and develop a strong team with a standard of excellence.
Director Duties and Responsibilities (including, but not limited to):
Be purposeful in living out the Create Raving Fan Strategy, which includes:
Work with the Leadership team to execute the business strategy
Execute Operational Excellence:
Maintain regular and consistent attendance and punctuality
Oversee and lead all Back of House operations
Follow Chick-fil-A's operational policies and procedures as well as other duties as assigned
Achieve business results through focus and action on tactical objectives and tasks
Run day-to-day shift operations including ensuring breaks are given, positions are filled and guests are served.
Must love working in a team environment and building strong effective teams
Hold team members accountable through effective coaching and communication
Treats all team members with respect while providing them with direction and feedback (on the job & performance evaluations)
Awareness and understanding of restaurant tools & systems (Produce Ordering, Truck Ordering, End of Month, Daily Inventory)
Work with shift leaders that can open/close for your area of focus by creating systems and processes that allow you to ensure tasks are completed while not being in the restaurant.
Identify, Train & Develop leadership bench capable of opening/closing your area of the business
Partner with other leaders to continuously improve kitchen operations.
Partner with Executive Director to create weekly team member schedule (at minimum two weeks in advance)
Ensure coverage of all day parts
Owner/Operator and executive Director are not coverage
Partner with Executive Director to perform 90 evaluations
Food Safety responsibilities:
Execute Restaurant Food Safety Systems- LEAN Chicken, AHA, Safe Daily Critical, eRQA, EcoSure
Completion of 3 SAFE daily criticals
Weekly eFSE completion
Daily eRQA
Ensure Chicken Tracking & Labeling is completed- minimum 2 touch points per shift
Review EcoSure quarterly visit and resolve any noted items
Repeat items are NOT acceptable
Create a culture of Food Safety
Expectation: Maintain Elite Food Safety Rating
Ensure all restaurant cleaning systems and protocols are being followed (daily, weekly and monthly)
Understand the federal, local and Chick-fil-A Inc. health regulations
Required to pass ServSafe Manager Exam
